How we make it
- Brined overnight for juicy, seasoned meat right through.
- Double-fried in clean oil — light first fry, hot second fry for the shatter-crisp shell.
- Wok-tossed with red & green chilli, white onion, garlic and spring onion.
- House seasoning — Sichuan pepper, white pepper, five-spice, sea salt, ground to order.
